Why the sudden influx of Gluten Free recipes?

Embarking on a new chapter in my life.
Hashimoto Thyroiditis.

It’s official. I have Hashimoto’s.

Hashimoto’s is an autoimmune disease where the body is literally attacking my thyroid. It causes inflammation, pain, fatigue (for real, more like exhaustion), puffiness in face, slow heart rate, intestinal/digestive issues, headaches and more.

I have suffered, in pain, for over 4 years now, with many doctors telling me, “there is nothing wrong you”. It went as far as having a hysterectomy in 2021 thinking this would fix everything, and this last fall my OB, the one who did my surgery, told me, “Having a hysterectomy will not change your hormones, you are depressed, here is a prescription for depression pills that will help your hot flashes”. And me saying, “no. I want my hormones checked”. She then handed me the prescription and walked out of the office. For real.

Fast forward to this past April when I attended a webinar with Dr. Randy Mann from Wise Woman Wellness in DePere, WI, and have had subsequent blood tests and thyroid tests.

I have hypothyroidism, low iodine, low ferritin, LOW vitamin D (shocker), vitamin B12 low, cortisol off balanced, progesterone is horribly low resulting in Estrogen Dominance, and to top it off, my thyroid antibody results came back at 39, when they should be around 100-130.

Why am I sharing this information? To help someone, anyone, who feels like the traditional medicine and doctor route has failed you time and time again. There is HOPE, there is a way to feel better, and there are doctors and nurses who listen to you and your symptoms for what they are – REAL.

You are not crazy. You are not alone.

The last four years on this journey has taught me so many things, resilience and determination to be HEARD to begin with. Not wanting to leave a doctor and cry in the car for the sake of feeling crazy, like my symptoms are “normal”.

Symptoms

Your hair should NOT be falling out.
The feeling of bugs crawling on your hands and legs is NOT real.
That fatigue? The daily fatigue you feel, exhausted to get off the couch, is real and you are not “lazy”.
The puffiness in your face is not water retention.
Your stomach issues may not be GERD or eating too much or heartburn.
That coldness that won’t go away is NOT normal.
Hating the hot AND cold is not normal, and I live in Wisconsin where we have BOTH in extreme.
Food intolerance/allergies are a symptom of something MORE.
Can’t sleep? Insomnia? Can’t fall asleep till after midnight? Can’t get out of bed in the morning?
Weight gain that is unexplained and in the abdomen? Even if you are eating clean?
Irritability and anger, irrationally and without cause?
Decreased libido? Sorry ladies, this is real, but not normal.

These are my symptoms. Over the next year I hope to tackle each and every one of them. Kicking them to the curb.

For now, I am on supplements and taking progesterone and soon to be on NP Thyroid medicine, because synthetic thyroid meds are really NOT that great for your body. If you are on one, look into the ones that are more closely related to female thyroid hormones and not synthetic. 50% of women on Synthroid feel better and experience weight loss with switching to NP Thyroid.

In addition to supplements and medication, I am now officially Gluten Free AND Dairy Free, no more alcohol and no more coffee/caffeine.
However, the coffee has been the one thing that is SLOWLY going away. I can’t get rid of it all at once or someone will get hurt.

So, embarking on this journey will lead me to be healthier and hopefully happier.

Ingredients for Gluten Free Sheet Pan Sausage

2 Kielbasa Sausages
12 oz Green Beans
1-pound Potatoes
3 Tbsp Oil
3/4 tsp Salt
1/2 tsp Pepper
1/2 tsp Garlic Powder
1/2 tsp Dried Basil
1/2 tsp Oregano
1 Onion diced, optional

Directions for Gluten Free Sheet Pan Sausage

1. Preheat the oven to 425 degrees Fahrenheit.

2. Line a rimmed baking sheet with parchment paper, then set aside. There is no need to spray the parchment paper with nonstick spray.

3. Place a heavy-bottomed pan on the stove and add 3 Tablespoons Oil, warm to medium. Using a cast iron pan works best. A ribbed pan works awesome to get little grill lines on the sausages.

4. On a cutting board, slice the Kielbasa sausages to 1/4-1/2-inch-thick slices.

5. When the pan is hot, add the sliced sausages and cook until slightly browned. Stir often to make sure all sides of the Kielbasa browns.

6. If desired, dice an onion on the cutting board and add it to the sausages and cook. Two pans were made, one with onion and one without. Having a family of six, doubling a recipe has been necessary for about five years.

7. While the sausages cook, place the potatoes into a sink colander, rinse them and then place them on the cutting board. This sink colander spreads to fit most sinks and keeps your food off of the dirty sink basin!

8. Peel the potatoes and then cut them in half, then cut each half into 1-inch cubes.

9. Transfer the potatoes to the prepared sheet pan, spreading them around.

10. Wash the green beans in the sink colander, then transfer to the cutting board. This sink colander spreads to fit most sinks and keeps your food off of the dirty sink basin!

11. Cut the ends off of the green beans, then transfer to the sheet pan. Spread the green beans around the sheet pan, there is no need to keep them clumped together.

12. When cooked, transfer the sausages to the sheet pan and spread all of the ingredients around into a single layer.

13. Drizzle oil over the potatoes and green beans, then season with 3/4 tsp Salt, 1/2 tsp Pepper, 1/2 tsp Garlic Powder, 1/2 tsp Basil and 1/2 tsp Oregano.

14. Bake the Gluten Free Sheet Pan Sausages and Potatoes for 20-25 minutes. Two pans went into the oven because one had onions and the other did not.

15. Remove from the oven and rest the Gluten Free Sheet Pan Sausage with veggies for 5 minutes.

  • Sink Colander

Ingredients
