Chai tea often uses black tea, however, needing to have a caffeine-free diet poses new restrictions. Finding recipes is fairly easy, but finding recipes that follow dairy-and-gluten free is slightly harder.
This recipe for a Vegan Chai Latte is made with only 8 ingredients. Finding a gluten free coconut milk is quite easy, as coconuts are a naturally gluten free food.
Chai Latte Ingredients
Star Anise
Star Anice, Illicium verum, is a medium-sized evergreen tree found in Vietnam and China and made from the fruit of the tree. The flavor resembles licorice and is used medically and for the flavor in the culinary applications.
Star Anise bring a spicy flavor to the Vegan Chai Latte.
Medjool Dates
Medjool dates are originally from the Taflalt region of Morocco. They are dates that are sweet. Medjool dates are also found in the United States, Israel, Palestine, Iran, Saudi Arabia, South Africa, and Jordan. There are many benefits of Medjool dates, some include antioxidants, fiber to help lower LDL, and more.
In this Vegan Chai Latte recipe, Medjool Dates help bring a creamy and sweet flavor to the drink.

Cardamom
As a common ingredient in Indian cooking, it has a strong flavor and aromatic. In India, cardamom is commonly found in masala and curry dishes.
The cardamom adds a deep flavor to the Vegan Chai without the need to buy a spice mix.
Most packaged spice mixes include dairy, wheat and soy, and needing to avoid dairy and wheat brings about the necessity to make your own seasoning blend.

Coconut Milk
Coconut milk contains minerals, vitamins and iron. It is vegan, dairy free, gluten free, and super tasty. Recently, coconut milk has become very popular, and is a great replacement for dairy options.
When using can coconut milk, make sure you shake the can very well as the contents can settle and separate.

Vegan Chai Latte Recipe
Vegan Chai Latte Ingredients
3.5 oz Coconut Milk
1 cup Water
1-2 pinch Ginger
4 Medjool Dates, pitted
1 Star Anise
1/2 tsp Cinnamon
1-2 pinch Cardamom
1 pinch Clove

Vegan Chai Latte Directions
1. Place a medium saucepan on the stove. Make sure you have one with a lid.
2. Shake the can of Coconut Milk well, then open the can and empty the Coconut Milk into the saucepan. Shaking the can helps to mix the ingredients as they can settle and separate.

3. Measure and then add 1 cup water to the saucepan.
4. Measure and then add the 1-2 pinch Powdered Ginger, 1 Star Anise, 1/2 tsp Cinnamon, 1-2 pinch Cardamom, and 1 pinch Clove to the Coconut Milk in the saucepan and mix well with a spatula.
Using a spatula that is thin helps to not only stir the ingredients into the coconut milk, but also helps to remove the coconut mild from the can after pouring it into the saucepan. This spatula set from Rachel Ray has three different sixes, and the smallest of the three is perfect for this recipe.

5. On a cutting board, use a knife and cut open 4 Medjool dates and remove the pits. Add the pitted dates to the saucepan. It may be easier to also cut the dates in half before adding them to the saucepan. Additionally, some of the dates may have the top stem attached, make sure to remove them prior to cooking.

Heat the Vegan Chai Latte
6. Turn the heat to medium and bring the mixture to a boil stirring occasionally.

7. Reduce the heat to a simmer and then simmer covered for 10 minutes. This time to simmer allows the spices to blend well into the coconut milk. Additionally, it softens the Medjool Dates prior to blending the Vegan Chai Latte mixture in the blender.

8. Remove the Star Anise from the mixture and toss, making sure to not blend the Star Anise with the rest of the ingredients.
9. When done, carefully pour the contents of the saucepan into a blender. Place the lid on the top and add a towel. Make sure to revere the lid insert to allow for venting while processing.
Without venting and blending warm ingredients, the lid could pop off and then cause burns and a huge mess. Make sure to vent and then cover your blender while processing this Vegan Chai Latte mix.

10. Pour the drink into a coffee mug, sprinkle with cinnamon if desired, and then enjoy.
