Breakfast for dinner is one of our family’s favorite meal choices. Pancakes, omelets, waffles, fried eggs, bacon, quiche and more. Breakfast for dinner can be a great way to make a lot of food for a little money.
With a family of six, finding meals for under $20 is the goal each week while grocery shopping. With eating dinner, we even had enough leftovers for Tyler to have lunch the next day and to put a meal in the freezer for myself.
Recently, I was diagnosed with Hashimoto’s Thyroiditis. Because of this, changing my diet is the second most important way to eliminate symptoms and reduce inflammation in my entire body.
Switching to a Gluten Free and Dairy Free diet is what is recommended for calming the symptoms of Hashimoto’s. Having Hashimoto’s means your immune system has built a resistance to your immune system and attacking it, thus compromising your thyroid and entire body as a whole.
Going gluten free and dairy free helps calm the immune system from attacking your thyroid and destroying any gains on leveling hormones. Plus, following a strict gluten free and dairy free diet helps reduce gut inflammation, which is always a good thing.

Cost Breakdown for this Recipe
Below is the cost breakdown for each ingredient we used for this Dairy Free Hashbrown Bake. Additionally, we had ham slices on the side and grapes.
Sausage $2.20
Hashbrown Patties $3.15
2 dozen eggs $1.50
Dairy Free cheddar and mozzarella cheese $2.00
Mini sweet peppers $0.75
The total cost for this Dairy Free Hashbrown Bake was $9.60. Included in the Dairy Free Hashbrown bake were the hashbrowns, 2 dozen eggs, 1-pound cooked ground sausage and diced sweet peppers.
Dairy Free Hashbrown Bake Recipe
Dairy Free Hashbrown Bake Ingredients
1 package Frozen Hashbrown Patties
2 dozen Eggs
1/2 cup Dairy Free Cheddar Cheese
1/2 cup Dairy Free Mozzarella Cheese
3 sweet Peppers
1/2 tsp Salt
1/4 tsp Pepper

Dairy Free Hashbrown Bake Directions
1. Preheat the oven to 375 degrees Fahrenheit.

2. Arrange hash brown patties on the bottom of the pan.
Lay some of the hashbrowns on the sides of the bake dish as well as the base. Use hashbrown patties that are frozen and make sure, for a Gluten Free recipe, that you use Gluten Free hashbrown patties.

3. Set a medium bowl on the countertop, then crack 2 dozen eggs into the bowl. Use a whisk and whisk the eggs.
These are my favorite bowls! They are stainless steel, dishwasher safe and have an anti-slip silicone base. The silicone base helps the bowl not move while you are using it and whisking your ingredients.
A few years ago, this set was gifted to me by my mom for Christmas. Wolfgang Puck 12-Piece Stainless Steel Mixing Bowl Set, Silicone Grip Bottom comes with lids with one that has an interchangeable shredder size.

4. On a cutting board, cut off the ends of the sweet peppers, then cut them and remove the seeds. Once cleaned of seeds, dice the sweet peppers and then set aside.
Having a cutting board that is dishwasher safe with a cut-out edge around the side helps to make meal prep easy. My favorite is this KitchenAid Classic Plastic Cutting Board with Perimeter Trench and Non-Slip Edges.

5. Add the 1/2 cup of each Dairy Free Cheddar and Mozzarella cheeses to the eggs in the bowl.
Dairy Free and Gluten Free cheese, more like vegan cheese alternative, can be found at most major grocery stores. This brand, Earth Grown Vegan, is found at ALDI, is cheddar and mozzarella cheese flavored.

Add 1 cup of Coconut Milk to the eggs in the bowl and then whisk well to combine all of the ingredients.
Make sure the coconut milk, or dairy free alternative you use, is certified gluten free AND dairy free prior to use if you have to have those restrictions. Not all coconut milks are gluten free, so make sure you read those labels and ingredients.

In a medium pan, brown 1 pound Sausage or any meat you desire to add.
This Hashbrown Breakfast Bake is great with pork sausage, chicken, chorizo, tofu, and even plain without meat if you desire a meat-free dinner. Using a cast iron pan is my go-to for cooking most meals lately. They are great, nonstick when seasoned properly, and give great flavor to your food.
If you haven’t cooked on cast iron, it is recommended and encouraged as they are cheaper than buying all those fancy pans that are trending. One pan can truly do it all!
As a frugal alternative, you can also check out your local thrift stores to see if there are any for sale. Typically, you can find them for under $20, and they only need a good deep clean and seasoning prior to use. That is one GREAT thing about cast iron, they are literally SO hard to ruin.

When the meat, if using, is browned, drain the meat and then add it to the bake dish prepared with the frozen hashbrown patties.
There are many ways to drain the grease from cooked meat. Typically, a lid is placed over the pan and then while picked up and holding the lid on the pan, pour the grease into a coffee mug. Then once the grease is hardened, scrape it into the trash.
An alternative is to place paper towels into the grease and soak it up, then toss the paper towels into the trash.

Slowly pour the egg mixture into the bake dish. There is no need to stir the eggs and sausage around, however it cooks is great!

Bake 45 minutes-1 hour, or until the eggs are no longer runny. Insert a knife into the center to test for any liquid, if it is still liquid, pop it into the oven for another 3-5 minutes and then recheck.

When the Dairy Free Hashbrown Bake is fully cooked, remove it from the oven and let the bake rest for 5-minutes before serving.
Finally, serve with salsa, Greek yogurt, more cheese, sour cream, or avocado.
