Healthy Dairy Free Chicken Alfredo Casserole

As far as new recipes go, this one was like coming back to an old friend. Chicken and bacon with Alfredo is a family favorite, however this recipe with hashbrowns instead of pasta was a complete 180 degrees. Needing to be Diary Free and Gluten Free is quite a new necessity. This Dairy Free Chicken Alfredo Casserole is a delicious dinner recipe that is done in under an hour.

Recipe for Dairy Free Chicken Alfredo

Ingredients for Dairy Free Chicken Alfredo Casserole

1 pound Chicken, shredded
2 cups Broccoli
3-4 cups Hashbrowns
1.5 cups Dairy-Free Alfredo
6 pieces Bacon
1/2 tsp Salt

Directions for Dairy Free Chicken Alfredo Casserole

Cook the Bacon

1. Preheat the oven to 375 degrees Fahrenheit.
2. Place aluminum foil onto a large, rimmed baking sheet, then spray it with nonstick spray.

By using aluminum foil, you can then easily remove the bacon from the rimmed baking sheet. Once removed, the grease can stay and harden on the foil for easy cleanup! At dishwashing time, simply wash the baking sheet instead of washing off or trying to remove the stuck-on bacon grease.

3. Lay the bacon onto the prepared baking sheet.

4. Cook the bacon until crispy. This time, thick sliced was used, so this pan of bacon took around 15 minutes to cook.

5. When done, remove the baking sheet from the oven and rest the bacon for 1 minute.

6. Place sheets of paper towel onto a plate, then transfer the bacon to the paper towel and rest to cool and soak up the residual bacon grease.

7. When cooled, use a knife and cut the bacon into 1/2-inch pieces onto a separate plate and discard the paper towel soaked with bacon grease.

Cook the Chicken

1. Place a large saucepan over medium heat, add 2 Tablespoons Oil, and then warm the oil.

2. Season the chicken with salt and pepper, then add the chicken to the hot saucepan and cook until the juices run clear.

As our store did not have boneless and skinless chicken thighs, bone-in was used. These, because of the bones, do tend to take longer to fully cook. Make sure to temp the chicken at 165 degrees Fahrenheit.

3. When done, remove the chicken to a plate that will be large enough to debone the chicken.

4. Let the chicken rest for 5 minutes, then use two forks and debone the chicken if needed. This also helps to make the cooked chicken pieces smaller for the casserole.

Prep the Broccoli

1. Use a sink colander and rinse the broccoli.

This over the sink colander is literally the best. It expands to fit most sinks and keeps food off the sink basin when rinsing or draining.

2. On a cutting board, cut the broccoli into small bits.

3. Set the broccoli pieces aside in a bowl.

Assemble the Dairy Free Chicken Alfredo Casserole

1. Preheat the oven to 350 degrees Fahrenheit.

2. Spray a 9 X 13-inch bake dish with nonstick spray.

3. Add the cooked and shredded chicken to the bake dish.

4. Add the broccoli to the bake dish.

5. Open the bag of frozen hashbrowns, then add the hashbrowns to the bake dish.

6. Add the cooked and diced bacon to the bake dish.

7. Pour the Dairy Free Alfredo Sauce over the chicken and hashbrown mixture, then stir well to combine.

Gluten Free and Dairy Free Alfredo Sauce

Homemade Dairy Free Alfredo Sauce that is also Gluten Free. In under 10 minutes, this from scratch sauce is easy and packed with fresh flavor.

Equipment

  • Microwave Safe Measuring Cup
  • Blender
  • Medium Saucepan

Ingredients
  

  • 1 cup Cashews raw
  • 1 cup Water HOT
  • 1/2 Onion diced
  • 2 Tbsp Garlic minced
  • 1/4 tsp Rosemary
  • 1/2 Tbsp Lemon Juice
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions
 

  • In a microwave safe measuring cup, measure 1 cup Water and then warm it to hot, around 1 1/2 minutes.
  • Measure the 1 cup raw cashews and place in a heat safe bowl.
  • Pour the hot water onto the cashews and then soak the 1 cup raw Cashew for 1 hour.
  • Add the 1 cup-soaked Cashews and 1 cup Water to a blender.
  • On a cutting board, roughly mince the 1/2 Onion and then add it to the blender.
  • On the cutting board, roughly mince the garlic and add it to the blender.
  • Measure and then add 1/2 Tbsp Lemon Juice to the blender.
  • Add 1 tsp Salt to the blender.
  • Measure and then add 1/2 tsp Pepper to the blender.
  • Remove the Rosemary from the stems and add them to the blender, roughly chopping them if desired.
  • Cover the blender and then process the ingredients until completely smooth.
  • When smooth, store the Dairy Free Alfredo in an airtight container, in the refrigerator, for up to 5 days.

Notes

Optional: Soak the 1 cup raw cashews in 1 cup water overnight.
Store in an airtight container for up to 5 days.

8. Use a large spoon and stir the ingredients in the bake dish.

9. Add more Dairy Free Alfredo if needed.

10. Sprinkle the ingredients with 1/2 tsp Salt.

11. Bake the Dairy Free Chicken Casserole for 35 minutes.

12. Remove the casserole and rest it on the counter for 5 minutes.

13. Serve and enjoy!
