Sometimes, mixing up dinner by having breakfast is a fun and exciting thing to do. Not only does it mix up the routine, but also gets the family involved in choosing the ingredients and learning to wrap Breakfast Burritos.

Recipe for Breakfast Burritos
Ingredients
1 Onion, diced
1 Green Pepper, diced
2 Tbsp Butter
2 Tbsp Oil
1 package Breakfast Potatoes
1 pound Sausage
1 Tbsp Taco Seasoning
1 Tbsp Water
10 Tortillas
12 Egg
8 oz Cheddar, shredded

Directions for Breakfast Burritos
1. In a sink colander, wash a green pepper, then cut it in half, remove the seeds, and dice on a cutting board.


2. Dice 1 onion on a cutting board, then set aside.


3. Warm a cast iron skillet on medium-high heat and then add oil.


4. Add the diced onions and peppers to the warm skillet and sauté until tender and translucent. Stir often.
A cast iron skillet produces the BEST result when sautéing onions and peppers.


5. Warm a cast iron skillet on medium heat and add oil. Then, add the 1 pound Pork Sausage to the skillet and cook until browned.
You can also choose to use turkey, ground beef, chicken or steak.


6. Add 1 Tablespoon Homemade Taco Seasoning and 1 Tablespoon Water to the cooked sausage, then mix well to combine.

7. Spray a rimmed baking sheet with nonstick spray.

8. Preheat the oven to 400 degrees Fahrenheit and lay the Diced Hash Brown Potatoes on the baking sheet.


9. Bake the Diced Hash Brown Potatoes for 12-18 minutes, or until they are golden brown.
This method is by far the easiest to make a large number of diced potatoes. You can also fry them on the stove in a large saucepan.

10. Shred the cheddar cheese in a Cuisinart Food Processor or use a box grater.
A food processor takes about 5 seconds to get this 8-oz Extra Sharp Cheddar Cheese shredded.


11. Crack a dozen eggs into a large bowl.
It is helpful to have a bowl or cup next to the eggs so you can place the eggshells into while cracking them.

12. Use a large whisk, poke the eggs and then whisk them until they are blended well.
Season with salt and pepper.


13. Warm a large skillet to Medium heat and spray with nonstick spray.

14. Using a spatula, slowly run the spatula along the base of the pan scraping off the eggs on the skillet.
This will give a great cooked egg for this Breakfast Burritos recipe.

Assemble the Burritos
15. Add a spoonful of potatoes, onion and pepper, seasoned sausage and finally egg.
Make sure to not overfill the tortilla, or it will be too stuffed and not able to roll up.



16. Roll up the end with the ingredients, then fold the two ends in and continue to roll the burrito so it closes.

Serve and enjoy!
You can also choose to add Greek yogurt, salsa, Taco Sauce, Guacamole or whichever ingredients you desire into your Breakfast Burritos.
