Road Trip Breakfast
Spring Break is upon us!
Our family took a road tip for our boys’ Spring Break this year. We left the house at 5am and had a 12-hour drive to Sevierville Tennessee for a week.


Additionally, to these Chocolate Chip Muffins, I also made a batch of Blueberry Muffins. With six of us, and an all-day drive, we powdered through these 24 muffins before lunchtime.
While on vacation we saw so many sights and went to so many fun stops. Our favorite was hiking near waterfalls and enjoying the sights near our cabin chalet in the hills near Gatlinburg. And the most amazing part, was we left 30-degree Wisconsin and enjoyed 70’s in Tennessee.

I made a cheesecake for my parents who watched our dog, Lucy, and used leftover filling to make mini-cheesecake bites for our trip as well. They were AMAZING with a dollop of Raspberry Jam from my sister, Jillian, who sent it from Alaska.
We had Alaskan Raspberry jam in Tennessee. And it was glorious.

Recipe
Ingredients for Chocolate Chip Muffins
3 very ripe bananas
3/4 cup brown sugar
Pinch of salt
1 egg
1/4 cup butter
1 tsp baking soda
1 Tbsp water
2 cups flour
1 cup chocolate chips

Directions for Chocolate Chip Muffins
1. Preheat the oven to 375 degrees Fahrenheit.
2. Spray a muffin pan with non-stick spray and then set aside.

3. In the bowl of a KitchenAid mixer, open and then add 3 very ripe bananas.

4. With the paddle attachment, mash the 3 bananas.

5. Measure and then add the brown sugar to the bowl and mix well to combine.


6. Add a pinch of salt to the mashed bananas.

7. Crack an egg in a bowl and then add it to the banana mixture and blend well to combine.


8. In the bowl of a microwave safe measuring cup, melt 4 Tbsp butter for 1 minute, then rest to cool slightly.

9. To a small bowl, measure and then add 1 Tbsp water and 1 tsp baking soda and mix well.

10. Add the baking soda mixture to the bowl and mix well to combine.

11. Slowly add the melted and slightly cooled butter.

12. To the KitchenAid mixer bowl, measure and add 1 of the 2 cups of flour and mix to just combined.


13. Add the second cup of flour and mix well to combine.


14. Measure and then add 1 cup Chocolate Chips to the batter and fold them in with a spatula.



15. Add the mixture to the muffin cups using a large ice cream scoop.


If desired, add sugar crystals to the tops of the muffins before baking.

16. Bake the Chocolate Chip Muffins for 12-14 minutes or until a toothpick inserted comes out clean.

17. Remove the muffin tin tray from the oven and rest on a cooling rack for 3 minutes.

Finally turn out the Chocolate Chip Muffins out from the muffin tin onto the cooling rack and rest to cool for 5 more minutes, then enjoy.
