When our family sits down to meal plan, there are often times that we decide on meals that are desired from a restaurant. Our family’s goal, while staying on budget, is to also include recipes that we can make at home equally as delicious as at a restaurant. This recipe for Chicken with Peanut Sauce is one that was inspired from a restaurant. Rather than spend half of our weekly food budget on one dinner at a restaurant, I like to make meals inspired by our favorite foods.

Getting Inspiration
This peanut sauce is not complicated and is actually made with pantry staples that include peanut butter, oil, garlic and soy sauce. While this recipe is not complicated or time consuming, it does have a creamy and incredibly delicious result. For dinner this night, we also sprinkled green onions on the top as an added garnish.
Another recipe that was inspired by a favorite at a restaurant is the Stuffed Chicken with a Lemon Thyme Cream Sauce based on Tyler’s favorite Stuffed Chicken Marsala. Chicken with Peanut Sauce Recipe
Ingredients
4 Chicken Breasts, cut into 2-inch cubes
1/2 cup water
2 Tbsp peanut butter
4 tsp rice vinegar
4 tsp soy sauce
dash red pepper
4 garlic cloves
1/2 tsp ground ginger
2 tsp oil

Directions for Chicken with Peanut Sauce
1. Mince garlic on a cutting board, then set aside.


2. Add 2 Tablespoons peanut butter to a medium sized bowl then set aside.

3. Add 4 tsp Rice Vinegar to the peanut butter in the bowl, then stir to combine.

4. To the bowl of peanut butter, add 4 tsp soy sauce, then stir with a spatula to combine.

5. Add a dash of crushed red pepper and 1/2 tsp ground ginger to the peanut butter mixture in the bowl, then stir with a spatula to combine.

6. Add the 1/2 cup water to the bowl, then use a whisk to stir the peanut butter sauce in the bowl and set aside.

7. Add 2 Tbsp oil to a large saucepan, and then warm the saucepan on medium-high heat. This ribbed pan was perfect to cook the chicken. However, when I did add the Peanut Sauce, I did transfer the chicken to a larger skillet.

8. Add chicken that has been cut into 1-to-2-inch cubes to the hot saucepan and then cook.

9. When the chicken is fully cooked, add the minced garlic to the skillet and then stir to combine.

10. When the garlic has cooked in the chicken, then add the peanut sauce and stir to combine. Matthew was so helpful today stirring the sauce. with a spatula.


11. Bring the sauce to a boil, then reduce the heat to a simmer for five more minutes.

Serve with your choice of vegetables and rice. Enjoy!

- Medium Bowl
- Large Saucepan
