This past week, our family has set about finding ways that we can cut down on our food waste. A staggering $1,600 per family is wasted in food scraps each year in the United States. For our family, living on one income and six people, that is a sobering amount of money. Our kids, in school, are also learning how to not waste food and to lower the amount of trash created. This past week, as we were meal planning, we decided to come up with ways that our family can help in reducing food waste in our own home. Making Chicken Stock from Scratch and then using that homemade stock to make Chicken Noodle Soup was a natural progression. Not only does making your own chicken stock help cut down on food waste, but it also stretches a food budget.

Chicken Noodle Soup Recipe
Homemade Chicken Noodle Soup Ingredients
4-6 cups deboned Chicken
Homemade Stock
4 Carrots
2 celery stalks
1 onion
4 garlic cloves
1 tsp oregano
2 tsp pepper
1 tsp salt
Noodles

Directions
1. Firstly, place deboned chicken into a 6-Quart pot.

2. Carefully pour prepared chicken stock back into pot. For the recipe for my Chicken Stock from Scratch, click the link below.

3. Wash carrots and celery in a sink colander and then set aside on a cutting board to be cut.


4. Peel carrots, cut the ends off and dice and then add the carrots to the pot.

5. Cut the celery in half and dice and then add the celery to the pot.


6. Peel the garlic cloves, mince them and then add the minced garlic to the pot.

7. Cut the onion in half, peel the skin off, dice it and then add to the pot.

8. Now is the time to season the soup by adding oregano, salt and pepper to the pot. Additionally, make sure to taste the soup before serving to check the flavor.

9. Cover the pot and then turn the heat to a boil over medium-high heat. When boiling, reduce heat to a simmer and cook for 2-4 hours.

10. Add pasta or make your own and add it right before serving to cook the pasta.
As homemade pasta does not need to cook for more than a few minutes, you can then add the homemade pasta up to thirty minutes ahead of serving.

Enjoy! We had Homemade Chicken Noodle Soup with Sourdough Grilled Cheese for dinner and was so delicious, especially on a chilly and windy day. This recipe makes 6-Quarts of soup and unless you are feeding an army, you will have leftovers for days! Chicken Noodle Soup Recipe

Chicken Noodle Soup made from Scratch
Equipment
- 6-Quart Pot
- Cutting board
Ingredients
- 4-6 cups Chicken cooked, deboned
- 4 Carrots
- 1 tsp Salt
- 2 Celery Stalks
- 1 Onion
- 4 Garlic Cloves
- 1 tsp Oregano
- 2 tsp Pepper
- Noodles
Instructions
- Place deboned chicken into a 6-Quart pot.
- Carefully pour Chicken Stock back into the pot if you are using homemade, otherwise, add your desired stock to the pot.
- In a sink colander, wash carrots and celery and then set aside.
- On a cutting board, peel carrots, cut the ends off and dice and then add the carrots to the pot.
- Cut the celery in half and dice and then add the celery to the pot.
- Peel the garlic cloves, mince them and then add the minced garlic to the pot.
- Cut the onion in half, peel the skin off, dice it and then add to the pot.
- Season your soup by adding 1 tsp oregano, salt and pepper to the pot, additionally, taste the soup before serving for flavor.
- Cover the pot and heat to a boil over medium-high heat, when boiling, reduce heat to a simmer and cook for 2-4 hours.
- Add pasta or make your own and add it right before serving to cook the pasta.
