Instructions
Mince garlic on a cutting board, then set aside.
Add 2 Tbsp peanut butter to a medium sized bowl then set aside.
Add 4 tsp Rice Vinegar to the peanut butter in the bowl, then stir to combine.
To the bowl of peanut butter, add 4 tsp soy sauce, then stir to combine.
Add a dash of crushed red pepper and 1/2 tsp ground ginger to the peanut butter mixture in the bowl, then stir to combine.
Add the 1/2 cup water to the bowl, then use a whisk to stir the peanut butter sauce in the bowl and set aside.
Add 2 Tbsp oil to a large saucepan, and then warm the skillet on medium-high heat.
Add chicken that has been cut into 1-to-2-inch cubes to the hot saucepan and then cook.
When the chicken is fully cooked, add the minced garlic to the skillet and then stir to combine.
When the garlic has cooked in the chicken, then add the peanut sauce and stir to combine.
Bring the sauce to a boil, then reduce the heat to a simmer for five more minutes.
Serve with your choice of vegetables and rice. Enjoy!
