Roll out one pie crust and lay it into the pie plate and then set aside.
In a medium bowl, mix together the sugar with the slightly cooled and melted butter.
Mix in the 1/2 cup corn syrup to the butter and sugar mixture.
Beat 3 eggs, then add the eggs to the ingredients in the bowl.
On a cutting board, dice the pecans if desired and then add them to the mixture in the bowl.
If desired, add 2 Tablespoons Bourbon to the mixture and stir well.
Pour the filling into the prepared pie crust.
Crack an egg into a bowl and then beat it. Using a basting brush, brush the egg onto the prepared crust.
Bake the pie for 10 minutes at 375 degrees Fahrenheit.
Then lower the temperature to 350 degrees Fahrenheit and bake the Pecan Pie for 25-40 minutes or until the pie in the center is no longer fluid but solid and just slightly jiggles.
Finally, remove the Pecan Pie from the oven and cool completely before slicing.
