Combine all ingredients in a large bowl and then mix with a spatula until thoroughly combined. OR use a KitchenAid mixer with the dough hook attachment.
The dough will be very sticky at this point, just keep your hands moist with water or oil while working with it.
Leave the dough in the bowl and cover it with plastic wrap for 20 minutes to allow for the yeast to rise.
While the dough is rising, preheat the oven to 425 degrees Fahrenheit, then oil two pizza pans or place parchment paper on baking stones if using, set aside.
Turn out the dough onto an oiled pan and then divide the dough into two or three equal parts.
Use your hands and gently press out the dough towards the edges of the pan.
Cover the pizza crusts with sauce and then top with toppings.
Bake the Gluten Free Pizzas for 15-18 minutes, until crust is golden brown.
Remove the pizza from the oven and let it rest for 3 minutes before serving.
