In the bowl of a KitchenAid mixer, add 3 1/2 cups sugar and 6 eggs.
Then, using the paddle attachment, mix well on medium speed until fluffy and pale in color.
To the fluffy sugar mixture, add 2 cups oil and 2 tsp vanilla, then mix well to combine.
Lay an 18-inch piece of parchment paper or wax paper onto a clean surface and then using a mesh strainer, sift the dry ingredients. These include the flour, baking powder and cinnamon.
Slowly add the dry ingredients into the bowl of the KitchenAid mixer 1-cup at a time until fully combined.
Add the 4 cups diced apples to the mixture and then mix well to combine.
Spray a 9 X 13 baking dish with non-stick spray and then set aside.
Pour the Apple Brownies mixture into the prepared baking dish and then use a spatula to spread it out evenly in the pan.
Sprinkle the top with a mixture of 2 Tbsp sugar and 1 tsp cinnamon if desired.
Finally, bake for 50-75 minutes or until a knife inserted comes out clean.
Remove from the oven, let rest for 10 minutes to cool and enjoy!
