This is not a healthy recipe; I just have to say that before getting into this post. With a whopping two cups of oil and three-and-a-half cups of sugar, this recipe for Apple Brownies is anything but healthy. However, if you want a cake-like dessert, that resembles coffee cake or a moist apple cake, then this recipe is for you!

Why sift the dry ingredients
To sift or not to sift; that is the question.
Sifting dry ingredients into flour has a few benefits when the recipe calls to do so. Sifting increases air in the flour which can then help to keep the batter fluffy. Additionally, sifting dry ingredients helps reduce and eliminate any clumps that were in the ingredients.
For this recipe, sifting the flour, baking powder, salt and cinnamon together is necessary. However, there are many recipes that do not call for sifting the dry ingredients.

Not enough apples?
Halfway through this recipe, there came a realization that there was only three, not four, cups of diced apples. Apple pouches to the rescue! Seriously, applesauce can be substituted in leu of many ingredients. For instance, when making pancakes, and you want to not include oil, substitute applesauce for a great flavor and taste.

These handy cinnamon applesauce pouches were left over from Matthew’s soccer game that was rained out on Monday.
Recipe for Apple Brownies
Ingredients for Apple Brownies
6 eggs
3 1/2 cups sugar
2 tsp cinnamon
4 cups flour
2 tsp baking powder
4 cups diced apples
2 cups oil
2 tsp vanilla
1 tsp salt

Directions for Apple Brownies
1. Preheat the oven to 350 degrees Fahrenheit.
2. In the bowl of a KitchenAid mixer, add 3 1/2 cups sugar and 6 eggs. Then, using the paddle attachment, mix well on medium speed until fluffy and pale in color.

3. To the fluffy sugar mixture, add 2 cups oil and 2 tsp vanilla, then mix well to combine.

4. Lay an 18-inch piece of parchment paper or wax paper onto a clean surface and then using a mesh strainer, sift the dry ingredients. These include the flour, baking powder and cinnamon.




5. Slowly add the dry ingredients into the bowl of the KitchenAid mixer 1-cup at a time until fully combined.




6. Add the 4 cups diced apples to the mixture and then mix well to combine.

7. Spray a 9 X 13-inch baking dish with non-stick spray and then set aside.

8. Pour the Apple Brownies mixture into the prepared baking dish and then use a spatula to spread it out evenly in the pan.


9. Sprinkle the top with a mixture of 2 Tbsp sugar and 1 tsp cinnamon if desired.


10. Finally, bake for 50-75 minutes or until a knife inserted comes out clean.

Remove from the oven, let rest for 10 minutes to cool and enjoy!
