How to make it Gluten Free
For this Gluten Free Granola with Pecans recipe, there are a few steps you need to take in order to make it Gluten Free. The two ingredients in this recipe that you must pay careful attention to are the Oats and Vanilla extract.
Not all Oats are Gluten Free. You’d be surprised to know that Oats can have cross contamination with wheat during processing, and having Oats that are free of the contamination is important for making a recipe free of gluten.

For instance, their Gluten Free Oats are fantastic, and they even have steel cut oats.
The other ingredient that you have to be careful with is Vanilla Extract. Depending on what alcohol the vanilla beans were sitting in is important for this recipe. Traditionally, Vanilla Extract is made with either Vodka or Bourbon, but there can also be other alcohols it is made with.
The FDA standard is .9 oz of beans per 8 ounces of alcohol that is 70 proof. The types of alcohol used are traditionally Brandy, Bourbon, Vodka or Rum.
Make your own Vanilla Extract
If you are worried about the quality of your Vanilla Extract, that one you buy for over $6 at the store, fear no more! You can make your very own, made from scratch, homemade vanilla extract that will be safe to consume if you are needing it without gluten.
How do you make your own Vanilla Extract? Honestly, it is the easiest recipe with only two ingredients. Literally, just 2! You pick a brand of alcohol that is Gluten Free and have quality vanilla beans.

Gluten Free Granola Recipe
Gluten Free Granola Ingredients
- 5 cups Gluten Free Oats
- 1/3 cup Maple Syrup
- 1/3 cup Brown Sugar, packed
- 4 tsp Vanilla Extract
- 1/2 tsp Salt
- 1/2 cup Oil
- 1 tsp Cinnamon
- 2 cups Pecans, chopped

Directions
Preheat the oven to 325 degrees with the oven rack in the upper-middle position.
Line a baking sheet with parchment paper and then set aside. The parchment paper will help protect the granola from getting accidentally stuck to the baking sheet and helps with easy removal after baking.
In a large bowl, whisk together 1/3 cup maple syrup, 1/3 cup brown sugar, 4 tsp vanilla, 1/2 tsp salt, 1/2 cup oil and 1 tsp cinnamon. Make sure your vanilla is gluten free as Bourbon Vanilla is NOT gluten free.

Measure and add the 5 cups Gluten Free Oats, mixing well with a spatula. Bob’s Red Mill has a great variety of Gluten Free items in addition to this Gluten Free Oats.
Fold in 2 cups chopped pecans, or any other nuts or fruits you choose to add. Mix the ingredients well with a spatula. The chopped pecans help to add flavor and texture to the granola.

Transfer mixture to the prepared baking sheet and spread it out evenly with a spatula.

Use a flat-bottomed baking dish to flatten and then compress the mixture. This helps to make the granola into chunks and clumps together.

Bake until lightly browned, 40-45 minutes, making sure to rotate the pan halfway through baking.
Remove baking sheet from oven and let rest to cool completely on the countertop. After baking, you can also use the flat-bottomed baking dish to compress the granola before it cools.
Break the Homemade Granola into pieces and then store in an air-tight container. As you use the granola, it will break apart from larger chunks into smaller pieces.
