Instructions
Preheat the oven to 325 degrees with the oven rack in the upper-middle position.
Line a baking sheet with parchment paper and then set aside.
In a large bowl, whisk together 1/3 cup maple syrup, 1/3 cup brown sugar, 4 tsp vanilla, 1/2 tsp salt, 1/2 cup oil and 1 tsp cinnamon.
Measure and add the 5 cups Gluten Free Oats, mixing well with a spatula.
Fold in 2 cups chopped pecans, or any other nuts or fruits you choose to add. Mix the ingredients well with a spatula.
Transfer mixture to the prepared baking sheet and spread it out evenly.
Use a flat-bottomed baking dish to flatten and then compress the mixture. This helps to make the granola into chunks and clumps together.
Bake until lightly browned, 40-45 minutes, making sure to rotate the pan halfway through baking.
Remove baking sheet from oven and let rest to cool completely on the countertop.
Break the Homemade Granola into pieces and then store in an air-tight container.
Notes
Make sure your vanilla is gluten free. If it is a Bourbon Vanilla, Bourbon is NOT gluten free.
