Using a Cuisinart Food Processor is by far, the easiest way to make a pie crust that I have found. Mixing by hand is hard to do and make the crust what it needs to be.
Using a KitchenAid mixer is also another option, and it blends the butter and flours well together.
Either way, food processor, by hand or mixer, whichever you find that works best for you, use it.

Gluten Free Pie Crust Directions

Insert the chopping blade attachment into a food processor.

Cut the 1 cup Dairy Free butter into 1/4-inch cubes, then add the butter to the bowl of the Cuisinart Food Processor.

Combine 2 2/3 cups Gluten Free Flour and 1/2 tsp salt in the bowl of a Cuisinart Food Processor. Bob’s Red Mill or King Arthur have very good 1-to-1 Gluten Free Flours that are perfect for any baking need.

Turn the food processor on until the flour and butter blend and become coarse crumbles. This can take anywhere between 2-to-4 minutes. Make sure to not overmix the butter and flour.

Add 1/4 cup ice cold water and then add a little at a time until the water is fully incorporated, and the dough does not stick to the sides of the bowl.

Separate this dough in three parts for three crusts and then place each in a plastic wrap.

Using your hands, form the dough into a flat hockey puck, let them rest for 1-hour in the fridge.

Take the pie crust out of the fridge and then roll out the crust on a well-floured surface with a rolling pin. Make sure to use Gluten Free Flour sprinkled on the surface prior to rolling out the crust.

Roll it down once or twice in a direction then spin the crust in a clockwise rotation to get it into a large square or circle shape.

Place the rolling pin in the middle of crust and flip one side over the top to carry it onto the pie pan, this is much easier than doing it with just your hands.

Flute the edges or make a design with the prongs of a fork. This specific Gluten Free Pie Crust was used to make Apple Pie. It turned out incredibly delicious and super tasty.

You can also cut strips of the crust to lattice the top of a pie, use a basting brush to baste a whisked egg over the crust and then sprinkle the top with sugar prior to baking.
