Dinner does not have to be difficult. In fact, you can make dinner by setting it all in the Crockpot and then forgetting it until you are ready to eat. This dinner recipe for a Crockpot Basil Chicken that is creamy and so delicious is easy to make.
By using tomato sauce and Coconut milk, the two combine to make a deliciously creamy sauce that is a sure win. Adding freshly chopped basil blends with the tomatoes and sauce to form a fresh and bold flavored sauce.
Crockpot Basil Chicken Dinner Recipe
Crockpot Basil Chicken Ingredients
- 14 oz can Diced Tomatoes with Italian Herbs
- 3/4 cup Tomato Pasta Sauce
- 3/4 cup Coconut Milk
- 2 tablespoons Corn Starch
- 2 teaspoons Minced Garlic
- 1 teaspoon Salt
- 1/2 teaspoon Dried Basil
- 1/4 teaspoon Black pepper
- 4 boneless Skinless Chicken Breasts OR Chicken Thighs
- 2 tablespoons Finely Chopped Fresh Basil

Crockpot Basil Chicken Directions
Spray the bowl of a Crockpot with nonstick spray. This is not a necessary step, and you can choose to skip this if desired. However, it CAN help in cleanup later!
Add the Chicken Thighs OR Breasts to the bowl of the Crockpot. Tonight, boneless skinless chicken thighs were used. Lately, they have been WAY cheaper than chicken breasts.
There has been a time when we only used chicken breasts while cooking. However, lately chicken thighs have been desired more in our house. The thighs do cook longer but can be more flavorful and tender than breasts.
To the Crockpot, open and then add the can of Italian Herb Diced Tomatoes to the Crockpot. These tomatoes are perfectly seasoned for this recipe, but you can replace these with original diced tomatoes.

Open the can of Tomato Sauce and add it to the Crockpot, then use a thin spatula to scrape out all of the sauce from the can. This thin spatula is my go-to for cans as it is thin, and the tips are perfectly designed to get into the corners of the can.

In a small bowl, whisk together the Coconut Milk and Corn Starch and then add to the Crockpot. Literally, this Wolfgang Puck 12-Piece Stainless Steel Mixing Bowl set is my go-to for everything. Whisking, sauces, salad, batter, popcorn and more. The silicone base helps the bowl to stay in place and they are conveniently dishwasher safe. Each bowl comes with a lid and one has interchangeable blades for shredding and slicing.
Stir in 2 tsp Garlic, 1/2 tsp Salt, and 1/4 tsp Pepper, then whisk well to combine.
On a cutting board, roughly chop the fresh Basil. Make sure the basil is cleaned and remove the leaves from the woody stems.

Add the roughly chopped Basil to the Crockpot on top of the tomatoes.

Cover the Crockpot, then cook on LOW for 3-5 hours, until a meat thermometer reads 165 degrees Fahrenheit.

Ingredients

- 2 Tbsp Basil fresh, chopped
Instructions
- Spray the bowl of a Crockpot with nonstick spray.
- Add the Chicken Thighs OR Breasts to the Crockpot bow.
- To the Crockpot, open and then add the can of Italian Herb Diced Tomatoes to the Crockpot.
- Open the can of Tomato Sauce and add it to the Crockpot.
- In a small bowl, whisk together the Coconut Milk and Corn Starch and then add to the Crockpot.
- Stir in Garlic, Salt, and pepper.
- On a cutting board, roughly chop the fresh Basil.
- Add the Basil to the Crockpot.
- Cook on LOW for 3-5 hours, until a meat thermometer reads 165 degrees F.
- Remove the Crockpot bowl and let it rest for 5 minutes.
- Serve Basil Chicken over rice, quinoa and veggies.
