Boneless Chicken Breasts OR Chicken Thighs

Instructions
Spray the bowl of a Crockpot with nonstick spray.
Add the Chicken Thighs OR Breasts to the Crockpot bow.
To the Crockpot, open and then add the can of Italian Herb Diced Tomatoes to the Crockpot.
Open the can of Tomato Sauce and add it to the Crockpot.
In a small bowl, whisk together the Coconut Milk and Corn Starch and then add to the Crockpot.
Stir in Garlic, Salt, and pepper.
On a cutting board, roughly chop the fresh Basil.
Add the Basil to the Crockpot.
Cook on LOW for 3-5 hours, until a meat thermometer reads 165 degrees F.
Remove the Crockpot bowl and let it rest for 5 minutes.
Serve Basil Chicken over rice, quinoa and veggies.
Notes
The exact cook time will depend on your slow cooker — a fuller slow cooker will take longer to cook, so a larger one will cook faster.
