To go with this Dairy Free Pork Masala dinner recipe, I made potato wedges and steamed broccoli. This Masala recipe also pairs well with Naan and Rice. Whatever you make to go with it, the flavors will bring out the delicious spices of the Masala sauce.

This Wolfgang Puck 12-Piece Stainless Steel Mixing Bowl Set, Silicone Grip Bottom is my go-to for daily use. Not only do they have fitting lids, but they also have a silicone bottom for an anti-slip hold.

On a cutting board, remove the silver skin from the pork tenderloin and then cut into 1-inch-thick slices. Using a sturdy and dishwasher safe cutting board helps to get this job done, so then you can pop the cutting board into the dishwasher after use.

Place the cut tenderloins into the mixture and then mix well with a spatula. Cover the bowl and rest in the fridge for at least 1 hour. This bowl set has lids, so place the lid that fits on.

In a large saucepan or Dutch Oven, heat 1 tablespoon coconut oil, then cook the marinated pork tenderloin until the juices run clear, around 10-15 minutes. A Dutch Oven helps to cook this recipe perfectly and is large enough for the entire tenderloin and sauce.

Once the pork tenderloin is cooked, remove it from the saucepan or Dutch Oven and then place it in a dish and set aside.

To the saucepan, melt 1 tablespoon Coconut Oil. Coconut Oil is gluten free and a great replacement for butter. You can also use a Dairy Free Butter; however, this recipe tastes amazing with Coconut Oil.

Cook the Potatoes

Firstly, rinse the potatoes in a sink colander, then on a cutting board, cut the potatoes in half and then into wedges.

On a baking sheet, add aluminum foil, then spray it with nonstick spray.

Preheat the oven to 400 degrees Fahrenheit. Add the potato wedges to a medium bowl, then drizzle the potatoes with oil and mix with a spatula. Spread out the potatoes on the baking sheet and sprinkle with salt.

Bake the potatoes for 20-40 minutes, or until they are golden brown. Remove the baking pan from the oven and rest the potatoes for 5 minutes.
