There are 3 Important items that everyone needs to make these Fajitas.

#1 – The BEST Sink Colander

The most important thing you need for this recipe is a GOOD sink colander. One that keeps your food OFF the sink basin. There are many reasons why this is vital and best practice while cooking.

Your sink is gross.

For real. It is nasty and germy and filled with bacteria. Honest!

Unless you use an antimicrobial spray, bleach or similar and let the product sit for 10 minutes on the surface of your sink, the germs will not go away. Read the directions on your antimicrobial or bleach and follow them fully to completely disinfect your sink.

To keep your vegetables, fruit and pasta safe from contamination, I recommend using a sink colander that extends on the basin and NOT resting inside the sink. This is my favorite sink colander that extends to fit most sinks, is stainless steel and easily cleaned, and dishwasher safe.

Recipe for Gluten Free Shrimp Fajitas

Ingredients for Gluten Free Shrimp Fajitas

2 pounds unpeeled Shrimp
1 Onion
8-10 Sweet Peppers or 1 Bell Pepper
2 medium tomatoes
2-3 Tbsp Homemade Taco Seasoning
1/4 cup Lemon Juice
Gluten Free Tortillas
Gluten Free OR Homemade Refried Beans

Directions for Easy Gluten Free Shrimp Fajitas

1. Open the bag of frozen raw, unpeeled shrimp and transfer them to a medium bowl. By using frozen, unpeeled shrimp, you get the best bang for your buck. Peeled shrimp is always more expensive, and peeling shell-on shrimp is quite easy to do.

2. Fill the bowl, covering the frozen shrimp, with water and rest on the countertop until thawed.
When thawed, peel the shrimp and make sure they are fully deveined.
The shrimp should already have a cut along the back or top of the shrimp. Simply peel off the skin, then with one hand hold the tail and gently pull the shrimp out of the tail.

Rinse and Prep the Fajita Ingredients

In a sink colander, rinse the tomatoes and peppers.
Transfer the rinsed tomatoes and peppers to a cutting board then cut and slice them thinly.
We had sweet peppers on-hand, so those were used with this recipe. however, a bell pepper can be used instead of the sweet peppers. About 10 little sweet peppers equal 1 bell pepper.

On the cutting board, cut the ends off and then peel the onion. Slice the onion thin and set aside.

Add 2 Tbsp Oil to a large saucepan and heat to medium high.
When the saucepan is warm, add the sliced onion and peppers and sauté until tender, around 5-7 minutes.

Slice the tomatoes thinly and then add them to the saucepan. Sauté the tomatoes for 1-2 minutes.

Measure and then add 2-3 Tablespoons of Homemade Taco Seasoning and 1/4 cup Lemon Juice, mix well, and cook for 2-3 minutes.

By using Homemade Taco Seasoning, you have 100% control over ingredients. Corn Starch is Gluten Free, so using it in the seasoning blend instead of flour works amazingly well.

Add and Sauté the Shrimp

Add the peeled and deveined shrimp to the saucepan and cook until just pink, around 2-3 minutes. Stir the shrimp often in the sauteed peppers and onions to incorporate the seasonings onto the shrimp.

Warm the Gluten Free tortillas and then serve the tacos with Gluten Free Refried Beans and top with any other desired ingredients.
To warm the tortillas, simply warm a large skillet over medium heat or warm a griddle pan to 350 degrees Fahrenheit. Place the tortillas on the warm surface and flip after 1 minute. Remove the warmed tortillas to a plate or tortilla holder. There are a few varieties of tortilla warmers, from 2-sided fabric tortilla warmers to hard sided tortilla warmers that are microwave safe.

One main feature of these two tortilla warmers is how they can both keep the tortillas warm. A warm tortilla is a soft and pliable tortilla and therefore less likely to break. Especially if you plan to use corn tortillas, which are notorious for breaking when cold. Use a tortilla warmer to keep them in perfect condition until needed.

  • 1 Onion
  • 8-10 Sweet Peppers or 1 Bell Pepper
  • 2 pounds Shrimp raw, unpeeled
  • 2-3 Tbsp Taco Seasoning homemade
  • 1/4 cup Lemon Juice
  • 1 cup Tomatoes sliced
  • Gluten Free Tortillas
  • Gluten Free Refried Beans

Instructions
 

  • Open the bag of frozen raw, unpeeled shrimp and transfer them to a medium bowl.
