BBQ Pulled Pork Sandwiches – an easy take on a delicious classic

Some days I just want an easy meal. One that can literally be a dump and cook in the Crock-Pot. This day in particular, we were in the midst of a massive snowstorm. Instead of spending time in the kitchen, we made a fort with the kids in the front and back yards. Sometimes, dinner can be super quick, not a lot of steps, and still be unbelievably delicious, yet kid friendly. This recipe for BBQ Pulled Pork in a Crock-Pot is easy and can be prepped in the morning for a fabulous dinner.

One of our families’ newest favorite finds has been Brioche buns and how to use them with sandwiches, peanut butter & jelly, burgers, make them into garlic bread, dessert, and more. They are so rich in flavor, light and fluffy, and so versatile. Our kids have fallen in love with the buns, and they do not last long in our house. They do cost a pretty penny, so that is one recipe that I am bound and determined to perfect. Hopefully by the end of January 2022, I can have a Brioche recipe published for you all!

A day in the snow

Because we spent the day playing in the snow, making a dinner that was easy-peasy was really important. This snowstorm started with hours of rain, then freezing rain overnight, and topped with three-to-four inches of heavy snow. We ended up spending hours shoveling the snow from our driveway and making it into a fort with the kids.

Forgive the picture, I tried to sneak it while inside getting the food ready and it is through the window screen. Last year my sister bought Matthew these iglu bricks and the kids had an absolute blast making an iglu in the backyard.

When we plan meals, having recipes that take different times to cook on a weekly basis is really important, especially when days in the snow take precedent over spending a long-time cooking. This pulled pork sandwich was perfect after a day outside in the cold. Crock-Pot friendly meals are awesome on a Saturday! Literally, dump it all in, turn on the temp setting and then let it do its thing.

After it was cooked, the longest hands-on task was shredding the meat with forks. Using forks to shred meat is literally the easiest way to get it all into a consistent size.

Why this recipe works

Along with BBQ pulled pork sandwiches on Brioche buns, we also had salad and fruit. This recipe works because it is already seasoned and ready to go. The price was fantastic, and it was really easy make, and really delicious. Plus, another bonus was that our kids absolutely LOVED the taste of the seasoning. The flavor was full-bodied without being too spicy, but with just enough spice to be super delicious.

I do not often use pre-seasoned or pre-packaged meat, but in this case, this called out to me in the store. This brand of pulled pork came in two different flavors. Carnitas and BBQ. Maybe the next time I will try the Carnitas flavor, and I will let you all know what that one is like.

Cost breakdown for this recipe

There were literally three things that were used for this BBQ Pulled Pork sandwich recipe. Brioche buns, BBQ pork meat, and a Crock-Pot liner. That’s it! Each of these items were bought at ALDI.

The package of BBQ seasoned pork roast was $2.39 a pound.

The total cost of this meal was $18.05.
Sam ate at least four sandwiches, Matthew ate a few, Levi and Elliana each had one. For a total of 10 sandwiches that were eaten at dinner, that puts each sandwich costing only $1.80. We even had a lot of leftovers for the next day. I have said it before, that feeding our family of six for under twenty dollars a meal is the goal.

A Brioche History

Brioche rolls first were introduced in the Middle Ages in the Normandy region of France and get their color and texture because of the heavy amounts of eggs and quality butter used.
“The word brioche first appeared in print in 1404, and the name is believed to be derived from bris and hocher, meaning to knead and to stir” Source

What makes Brioche set apart from a regular bread is that it then contains a high quality and number of eggs, milk and butter. The first written record of Brioche was around 1400 and has gained popularity in America since 2013 at its first Brioche Pasquier bakery in California. It is said that the 1930’s had bagels, the 1980’s had croissants and the 2010’s have Brioche.

Ingredients for BBQ Pulled Pork Sandwiches

BBQ seasoned pulled pork

Directions for BBQ Pulled Pork Sandwiches

1. Firstly, place a liner in the Crock-Pot. These slow cooker liners are just fantastic. They make cleanup a breeze and actually help to keep the food from burning onto the side of your pot.

2. Cut open the package containing pre-seasoned pork shoulder and then place it into the Crock-Pot, using a spatula to scrape any excess seasoning or juices from the inside of the package and scoop it all into the pot with the meat. By adding the remaining juices and seasoning, you give the meat additional flavor while cooking.

3. Cover the Crock-Pot and then set the temperature on LOW for 6-8 hours or HIGH for 4-6 hours.
Make sure the edges of the liner are wrapped over and around the handles of the Crock-Pot, as that will help them not slide down while cooking.

4. When done, remove the meat from the Crock-Pot and then place it into a container and use two forks and shred the meat.

Along with the sandwiches, we had salad with this dinner. To make a simple salad, cut up lettuce, cucumber, tomatoes and olives. Sprinkle the top of the salad with croutons and drizzle with your favorite dressing.

5. Finally, serve BBQ Pulled Pork on rolls and enjoy! To spice your sandwiches up, you can add cheese, BBQ sauce, ranch or whatever condiments you desire. Our kids ate some of their sandwiches with ranch and Swiss cheese, and it was actually super delicious!
