Spray a rimmed baking sheet with nonstick spray and set aside.
Preheat the oven to 350 degrees.
In a sink colander, wash the tomatoes and then lay them on the prepared rimmed baking sheet.
Cut the top off a head of garlic and then add it to the rimmed baking sheet, nestled amongst the tomatoes.
Cut an onion and peel the skin off, then slice it, laying the slices on the prepared baking sheet.
Add 1 package Dairy Free Cream Cheese on the baking sheet.
Drizzle 4 Tablespoon Oil over the food on the baking sheet.
Sprinkle salt and pepper over the tomatoes.
Place the baking sheet into the preheated oven and then cook the tomatoes until they are burst open, and the onion is carnalized.
Remove the tomatoes from the stems and add them to the 6-Quart pot.
Add the onion to the pot, then use a paper towel to squeeze the garlic from the head and add them to the pot.
Use a spatula to scrape the liquid from the baking sheet into the pot.
Use an emersion blender to blend the ingredients in the pot until smooth.
Place a large bowl under a strainer and then pour the contents of the pot through the strainer, removing any large pieces.
Transfer the ingredients from the bowl back into the 6-Quart pot.
Place the pot onto the stove and heat until just boiling, stirring often.
Reduce the soup to a simmer and cook for 5 more minutes.
Serve and enjoy.

To make the Viral Tomato Soup DAIRY FREE, use Dairy Free Cream Cheese. You can also make it regular with traditional cream cheese.For a creamier cheese, use 2 Cream Cheese packages.Remove the tomatoes from the stem to avoid any stems or hard woody pieces in the soup.
