Instructions
Preheat oven to 375 degrees Fahrenheit.
Cut the ends off the dragon fruit and then cut the skin off in strips from top to bottom.
On a cutting board, slice the fruit and then dice into chunks.
Put the fruit into the KitchenAid bowl and then mix on low for 30 seconds.
Add 3/4 cup sugar and dash of salt to the fruit and mix until combined.
Add 1 egg to the bowl and mix to combine.
Melt 1/4 cup butter in a microwavable container and then add to the mixing bowl SLOWLY to not cook the egg.
You can let the butter cool before adding to the batter.
In a small bowl, put 1 Tbsp water and 1 tsp baking soda, then mix well and add it to the mixing bowl.
Add the 2 cups of flour one cup at a time until blended and smooth.
Pour mixture into a 4 X 8-inch pan that has been sprayed with non-stick spray.
Bake for 45 minutes or until a knife inserted comes out clean.
Remove the bread from the oven and rest to cool before enjoying.
