Prep your baking pan by lining a 9 X 13-inch pan with parchment paper, then set aside.
Preheat your oven to 350 degrees.
In a large bowl measure and add 3 1/2 cups Old Fashioned Oats, 2/3 cup flour, 3 Tbsp brown sugar, 3/4 cup rice cereal, 3/4 tsp salt, and 3/4 tsp baking soda, then stir well to fully combine the ingredients.
Measure 1/3 cup coconut oil into microwavable measuring cup and microwave for 1 minute until melted.
Add 2/3 cups honey to the melted coconut oil and then mix well with a fork or whisk.
Add 2 tsp vanilla extract into mixture and then mix well.
Drizzle coconut mixture over oats and stir until completely combined.
Transfer the oats mixture into the prepared pan.
Use a small flat-bottomed pan to press the mixture down flat, then set this aside for later.
Bake at 350 degrees Fahrenheit for 22 minutes.
Remove the baked granola bars from the oven and then use the same flat small pan to again press the mixture down flat.
They will flatten more, additionally, let the Oats and Honey Granola Bars cool in the pan for 15 minutes.
Cut into bars using a long and serrated knife, this recipe makes 15 very nice sized granola bars.
Store the granola bars in an airtight container.

Once the Oats and Honey granola bars are finished baking you will press them down flat a second time.22 minutes is the PERFECT time to bake these Oats and Honey Granola Bars so they are soft and chewy.
