Instructions
Measure out 2 Cups Flour and place on a clean and dry surface.
Make a well in the flour for the wet ingredients to go into.
Crack the 2 Eggs into a bowl and then add 1/4 Cup Oil and 3 Tablespoons Cold Water to the eggs.
Mix the wet until blended with a fork.
SLOWLY, with a fork, add the wet ingredients to the dry.
Mixing with a fork, working in circles adding a bit of flour at a time to the wet until the wet is mostly mixed into the flour.
When most of the wet is mixed into the flour, scrape the mixture off the fork.
Using clean hands, finish mixing the Flour into the wet mixture and kneed the flour mixture together until the wet is fully incorporated into the dry.
Knead the dough to form a soft dough ball. The dough will stop adding more flour on the countertop once it is done.
Wrap the dough ball in Plastic Wrap and let rest 30 minutes before rolling out.
Using a knife or a bench scraper, split up the dough ball into smaller parts making it easier to use the pasta machine.
Use the pasta machine as directed to get your desired thickness and type of pasta.
If rolling out with a rolling pin, gently flour your surface so the dough does not stick.
To use the Pasta Machine, start at setting 1, then go to 3, then 5, then 7, and finally 9 to get a nice flat pasta sheet.
When the pasta is in strips to your desired thickness, roll them through the attachment for spaghetti.
Have a pot of water boiling and ready for the pasta if you plan to eat it right away.
Notes
As this recipe has egg, it should not be dried but cooked and eaten right away.
