On a clean and dry surface, measure out Semolina flour and then place it on the work surface.
Add 1/2 tsp salt to the flour and then mix to combine.
Make a well in the flour, like a volcano in the center, and then place 2 eggs, 2 Tbsp water and 2 Tbsp oil.
Combine all ingredients with a fork or your hands until a stiff dough forms.
Knead dough for 10 minutes, or until the dough becomes smooth and elastic.
Wrap the dough in a towel or place in a plastic bag, then rest the dough in the bag for 20 minutes.
On a lightly floured surface, divide dough in half and then place one half back into the bag.
Roll out dough with a rolling pin to desired thickness or use a pasta machine to roll out and then cut your dough.
I used a pasta machine and cut the dough in half, flattening it slightly so it can process in the machine. Do this by starting at level 1 and then go in stages to level 9, which is the thinnest pasta setting.
Run the Homemade Pasta sheets through the pasta machine, then carefully lay the pasta strips on the drying rack.
To cook the pasta, place it in the simmering soup and let cook for 2-7 minutes depending on thickness.
Serve soup and enjoy!
