Instructions
Preheat the oven to 325 degrees with the oven rack in the upper-middle position.
Line a baking sheet with parchment paper and then set aside.
In a large bowl, whisk together 1/3 cup maple syrup, 1/3 cup brown sugar, 4 tsp vanilla, 1/2 tsp salt, 1/2 cup oil and 1 tsp cinnamon.
Measure and add the 5 cups Old Fashioned Oats, mixing well with a spatula.
Fold in 2 cups chopped pecans, or any other nuts or fruits you choose to add.
Transfer mixture to the prepared baking sheet and spread it evenly.
Use a flat-bottomed baking dish to flatten and then compress the mixture.
Bake until lightly browned, 40-45 minutes, making sure to rotate the pan halfway through baking.
Remove baking sheet from oven and let rest to cool completely.
Break granola into pieces and then store in an air-tight container.
