Instructions
Preheat the oven to 350 degrees Fahrenheit.
Set the butter to rest to room temperature for 20 minutes.
In a medium bowl, measure and add the 1 1/2 cup Gluten Free flour, 1 tsp Baking Soda, 1 tsp Cinnamon and 1/2 tsp Salt, whisk well and set aside.
In the bowl of a KitchenAid mixer, add the 1 cup Brown Sugar and 1/2 cup Sugar.
When room temperature, cut the 1/2-pound Vegan Butter into 1/4-inch cubes.
Add the butter to the KitchenAid mixer and then cream the ingredients together until creamy.
Add 2 eggs and 1 tsp Vanilla Extract and mix well to combine.
To the butter mixture in the KitchenAid bowl, add 1/2 Gluten Free flour mixture and mix until just combined.
Add the remaining Gluten Free flour and mix well.
Measure and then add the 3 cups Gluten Free Oats to the mixture and mix until completely combined.
Add 1 cup Raisins to the mixture and then mix well.
Place a piece of Parchment Paper on a baking stone.
Measure out 1-2 Tbsp of the Gluten Free Oatmeal Raisin cookie dough and drop them off onto the Parchment Paper.
Bake the Gluten Free Oatmeal Raisin Cookies for 10-12 minutes or until golden brown.
Remove the baking stone from the oven and then rest the cookies on the baking sheet for 2 minutes.
Use a spatula and transfer the cookies to a cooling rack to cool completely.
