Spray a 9 X 13-inch Bake Dish with nonstick spray and then set aside.
Wash the apples in a Sink Colander, then transfer the apples to a Cutting Board.
Use a vegetable peeler and peel the apples, then dice the apples with a knife.
When diced, 1/2-1/4-inch pieces, transfer them to a medium bowl and set aside.
In the bowl of a KitchenAid Mixer, add 6 eggs.
To the bowl, measure and then add 3 1/2 cups Sugar, insert the paddle attachment and mix until fluffy and pale, around 2-5 minutes.
To the KitchenAid bowl, measure and add 2 cups Oil and mix to just combine.
Measure and add the 2 tsp Vanilla extract.
To a medium bowl, measure and add the 4 cups 1-to-1 Gluten Free Flour, 2 teaspoons Baking Powder, 2 teaspoons Cinnamon and 1 teaspoon Salt, whisk to mix and set aside.
Add half of the dry ingredients to the wet and mix until just combined. Make sure to not overmix.
Add the remaining dry ingredients and mix until just combined.
Stir in the diced apples to the batter with a spatula.
Transfer the mixture to the prepared bake dish, then bake the Apple Brownies for 45 minutes.
Remove from the oven and let the Apple brownies cool completely, then cut and serve.
Notes
Gluten Free desserts cook at a different time than traditional recipes. Make sure to watch the Brownies as they are baking and check them at 40 minutes with a toothpick for doneness.
