Instructions
Firstly, in a double boiler, put enough water in the base to not touch the top layer, then set it on the stove to medium.
Stir the chocolate often until it is melted completely, then turn the temperature to low to keep the chocolate melted.
Open the package of whole dates, with pits, and use a sharp paring knife to cut the dates to the pit on only ONE side.
Carefully open the date, to not break it all the way open, and remove the pit, then set aside and continue de-pitting all of the dates.
Use a butter knife to smear peanut butter in the inside of all of the dates, around 1 teaspoon worth.
Place a pecan piece into each date, making sure it lays flat in the peanut butter.
Close each filled date so the seam closes and then set on a baking sheet with parchment paper.
Once all of the dates are filled and close, place the baking sheet into the freezer for 10-20 minutes to firm up the dates.
Remove the baking sheet from the freezer and then place on the countertop by the double boiler with the melted chocolate.
Using a fork to help move and dip the chocolate, coat each in turn in the melted chocolate and then place on the parchment paper.
Once all of the dates are dipped and covered in chocolate, place the baking sheet back into the freezer for 20 minutes to firm up the chocolate.
Remove the baking sheet from the freezer and break off any extra pieces of chocolate off of the dates.
Then place them into an airtight container to store, with layers of parchment between layers of dates.
Serve and enjoy!
