Spray a 9 X 13-inch baking pan with nonstick spray, then set aside.
On a cutting board, place a chicken breast, then cut in half and transfer to the prepared dish.
Cut all of the chicken and add them to the pan.
Place a mesh strainer over a bowl and then open the can of Sun-Dried Tomatoes. Pour the tomatoes into the strainer to remove the oil and then set aside.
In a large bowl, add the Coconut Milk, Fire Roasted Tomatoes, Tomato Paste, drained Sun-Dried Tomatoes, Minced Garlic, and Pine nuts, then stir well with a spatula.
Transfer the tomato mixture to the baking pan with the chicken.
Bake the Creamy Tomato Chicken Bake
Bake until the chicken registers a temperature of 165 degrees Fahrenheit.
Baking time may vary depending on the amount and thickness of your chicken. Start at 45 minutes, temp the chicken and cook longer if needed.
Remove the baking dish from the oven and allow it to cool for 5 minutes.
Cook the pasta
Fill the 3 Quart pot with water and bring it to a boil over medium-high heat.
Once the water is boiling, add the pasta and then cook according to the instructions.
Drain in a sink colander and return the pasta to the pot.
Serve the tomato sauce and chicken breasts over pasta and enjoy!
Gluten Free Instructions
For a Gluten Free version, make sure you use a Gluten Free Pasta.
Check the label on your canned foods to make sure they are also Gluten Free before using.
