In the bowl of a KitchenAid mixer, pour in warm water, 1 Tablespoon yeast and 1 Tablespoon maple syrup, then whisk well to combine.
Let the mixture rest for 5 minutes.
When the yeast water is bubbly, add 1 Tablespoon cinnamon, 1 teaspoon vanilla, 3 1/2 cups water and 1 teaspoon salt, then mix well until fully combined.
On a clean countertop, pour out the cinnamon raisin bread dough and then gently flatten it into a 12-inch by 12-inch square.
On the bread dough, add the 2/3 cup raisins, 1 Tbsp brown sugar and 1 Tbsp cinnamon making sure to spread the mixture around evenly and 1-inch away from the edges of the dough.
Carefully roll up the bread dough and then fold in the sides, making sure to pinch the seams together.
Spray an 8 X 4 loaf pan with non-stick spray and then place the Scratch Made Cinnamon Raisin Bread seam-side down.
Cover the loaf pan with plastic wrap and then rest for 20 minutes to allow the bread to rise.
Preheat the oven to 375 degrees Fahrenheit and then remove the plastic wrap off of the loaf pan.
Bake the Scratch Made Cinnamon Raisin Bread for 35 minutes with the rack in the middle of the oven.
Remove the bread from the oven and let it rest to cool completely before cutting and enjoy!
