Instructions
In a sink colander, rinse the celery and carrots, dice them, and then set aside.
Place 2 Tbsp oil in a 6-Quart pot on the stove and then heat on medium-high.
Dice 1 onion and cook in the pot.
Cut the bacon into 1/2-inch pieces and then place them into the pot to cook with the onion, until browned.
Cooking time will vary depending on your stove and additionally how much you want your bacon to be cooked.
Add the diced carrot and cut up celery to the pot and then cook until tender, 5-7 minutes.
Mince the 2 garlic cloves and add it to the pot, cooking until fragrant.
Open the 3 cans of beans and drain them and then pour the beans into the pot.
2 Great Northern Beans and 1 can of Cannellini Beans.
Measure and then add 8 cups water to the 6-Quart pot.
Finally, simmer the Bean and Bacon Soup on the stove on low for 2-4 hours.
