How to make this Gluten Free
Originally, this recipe was created to be Gluten Free. The Tomato Paste is, Sun-Dried Tomatoes are and so is the Coconut Milk. Coincidentally, Coconut Milk is naturally Gluten Free and can be used as a replacement for any dairy milk in recipes. Just make sure you use the canned version and NOT anything in a bottle or jug as that is a different style of Coconut Milk.
Canned Coconut Milk is packed with great flavor, good fats and all the right stuff to help you stay healthy. You can use Coconut Milk for chai tea, sauces, cheese sauce replacement or more.
When buying Tomato Paste, be sure to read the label and check for the GF certification that states it is Gluten Free, otherwise, do not use or buy it if you need it Gluten Free. Recently, this caught me off guard and a purchase of tomato paste went awry and ended up being given away.
As far as the Fire Roasted Tomatoes in this recipe, you can find them Gluten Free at most major retailers. As always, if you need it Gluten Free, check the ingredients and allergy warnings.
Creamy Tomato Chicken Bake Recipe
Creamy Tomato Chicken Bake Ingredients
6 Chicken Breast
Tomato Paste
Sun Dried Tomatoes
Fire Roasted Tomatoes
Coconut Milk
2 Tbsp Garlic
Pine Nuts
Farfalle

Creamy Tomato Chicken Bake Directions
- Preheat the oven to 375 degrees Fahrenheit.
- Spray a 9 X 13-inch baking pan with nonstick spray, then set aside.
- On a cutting board, place a chicken breast, then cut in half and transfer to the prepared dish.
- Cut all of the chicken and add them to the pan in a single layer.
- Place a mesh strainer over a small bowl and then open the can of Sun-Dried Tomatoes. Pour the tomatoes into the strainer to remove the oil and then set aside.
- In a large bowl, add the Coconut Milk, Fire Roasted Tomatoes, Tomato Paste, drained Sun-Dried Tomatoes, minced Garlic, and Pine nuts, then stir well with a spatula.
- Transfer the tomato mixture to the baking pan with the chicken spreading it out evenly with the spatula.

- Bake until the chicken registers a temperature of 165 degrees Fahrenheit.
- Baking time may vary depending on the amount and thickness of your chicken. Start at 45 minutes, temp the chicken and cook longer if needed.
- When done, remove the baking dish from the oven and allow it to cool for 5 minutes.

Cook the pasta
For dinner this night, Farfalle pasta was used and also leftover Gluten Free pasta for me. Having a large batch of pasta cooked ahead of time helps to cut down on needing to boil two separate types and then trying to keep them separate. If you DO cook Gluten Free pasta at the same time as gluten pasta, make sure to strain the Gluten Free FIRST to avoid any contamination.
- Fill the 3 Quart pot with water and bring it to a boil over medium-high heat.
- Once the water is boiling, add the pasta and then cook according to the instructions.
- Drain in a sink colander and return the pasta to the pot.
- Serve the tomato sauce and chicken breasts over pasta and enjoy!

- For a Gluten Free version, make sure you use a Gluten Free Pasta.
- Additionally, to having a Gluten Free pasta, make sure to cook it separately from the regular pasta and also strain this before he regular pasta to avoid contamination.
- Check the label on your canned foods to make sure they are also Gluten Free before using.
- Preheat the oven to 375 degrees Fahrenheit.
- Spray a 9 X 13-inch baking pan with nonstick spray, then set aside.
- On a cutting board, place a chicken breast, then cut in half and transfer to the prepared dish.
- Cut all of the chicken and add them to the pan.
