Introduction
Needing to go Gluten Free has been slightly difficult as of late. Finding recipes is one thing, but finding a recipe that is equally Gluten Free AND Dairy Free is more difficult. So, to alleviate the stress of always searching for new recipes, I am going to then alter my old recipes to make them suitable for my new diet needs.
One of these revitalized recipes is this Broccoli Cheese Soup. With a traditional base of butter, flour, milk and heavy cream, replacements were needed.
Dairy free butter is easier to come by than many years ago. Dairy free butter that is also nut free and gluten free is not that easy. Many stores do sell it, but make sure to check for a Gluten Free and Dairy Free label on the packaging.
Additionally, to butter, the milk replacement is quite important. In the past, I grabbed oat milk with no thought, thinking that it was fitting my needs. However, the brand I had been using was NOT Gluten Free, so I switched to Planet Oat brand Oat Milk, which is free from dairy, peanuts, gluten, soy, lactose, artificial flavors, artificial colors and artificial preservatives.
Frankly, I have been in a blogging slump as of late. With having a family vacation in December, holidays and illness, I have not set aside the time needed to blog as much as I should.
2024 is a new year, and in this new year, I am hoping to get right back to blogging and bringing you more amazing recipes and content. Each week I plan to have new recipes, remake old ones, and share my journey through Gluten Free and Dairy Free eating while trying to manage my Hashimoto’s Thyroiditis diagnosis from mid 2023.

Ingredients for Gluten Free Broccoli Cheese Soup
Below are the ingredients for this Gluten Free Broccoli Cheese Soup. Compared to many pre-packaged meals, these ingredients are fresh and minimal. A simple way to make something Gluten Free is to substitute flour with a 1-1 Gluten Free flour. Bob’s Red Mill has GREAT options for various varieties and needs. They have an entire line of Gluten Free items.
- 1/4 cup Dairy Free Butter
- 2 1/2-3 cups Diced Broccoli
- 1 cup Carrots, shredded
- 1/2 cup Onion diced
- 1/4 cup Gluten Free Flour
- 1 1/2 cup Chicken Broth, gluten free
- 2 cup Oat Milk, unsweetened
- 2 cup Dairy Free Shredded Cheddar Cheese
- 1 1/2 tsp Salt
- 1/2 tsp Pepper

Directions for Gluten Free Broccoli Cheese Soup
Place a 6-Quart pot on the stove, then melt 1/4 cup Dairy Free butter on medium. Make sure your butter is also GLUTEN FREE. Not all are, so read the labels!
In a sink colander, rinse the carrots and broccoli.
On a cutting board, peel and then shred the carrots using a box grater or a Cuisinart Food Processor, then set aside. The Food Processor gets the job done in under 2 minutes.
On a cutting board, chop the broccoli into 1/4-inch chunks, then set aside. The broccoli does not need to be perfectly chopped, or measured, just roughly chop it to small bite-size pieces.
On a cutting board, dice 1 medium onion, then set aside.
To the melted butter in the 6-Quart pot, add the diced onion, diced broccoli and shredded carrots. Then stir and cook until tender, around 5 minutes.
When the vegetables are tender and soft, measure and then add 1/4 cup Gluten Free Flour, then whisk well to combine.
Bob’s Red Mill has an amazing variety of Gluten Free options for flours. This 1-1 Baking Flour is perfect for just about any recipe. With a blend of flours including sweet rice flour, whole grain brown rice flour, potato starch, whole grain sorghum flour and tapioca flour, it mixes well to provide the best baking flour for a wide range of recipes.
Slowly add the chicken broth to the pot and stir with a spatula.
Finding a Gluten Free broth or stock can be quite difficult. Lately, I have loved using this Orrington Farms Chicken Soup Base which is Gluten Free. It is a powder that you blend with warm water to make a quick stock, or you can use it to make soup, gravy, sauces and more.
Measure and then add the unsweetened Oat Milk to the pot, then whisk to combine.
Add the salt and pepper and stir well to combine.
Continue to cook on medium until thickened, around 10-15 minutes, stirring occasionally.
When thick, add the Dairy Free Cheddar Cheese and whisk well.
Add the cheese in small handful amounts at a time until blended. Because it is a dairy free cheese substitute, it will take quite some time to melt into the Gluten Free Broccoli Cheese Soup. Just make sure to add it in small handfuls and whisk well until completely blended before adding more.
Continue to stir in more cheese and whisk well to combine, simmering on low.
Finally, serve and enjoy!

- 6 Quart Pot
- Whisk
- Cutting board

Ingredients
- 1/4 cup Dairy Free Butter
- 2 1/2-3 cups Diced Broccoli
