This post is all about how to make Pizza Dough from scratch, this recipe makes up to three pizza crusts.

2020 has been our family’s year of making new traditions. For Christmas dinner I made Pizza Dough, and then we watched a movie. With the pandemic, our Christmas ended up being low-key, and pizza is the perfect food to eat while watching Klaus. Making food from scratch is hard work, but so rewarding knowing I can make 7 pizzas for under $15.00. Honest!

Each time I make pizza, we do a few that are made with random ingredients. For example, if we have BBQ or ranch, we incorporate those into the sauces. This time, I really wanted to incorporate more veggies, so I added broccoli with chicken and my homemade alfredo sauce.

Pizza dough is super quick and easy to make in a KitchenAid mixer. Additionally, you can make Pizza Dough with a Cuisinart Food Processor. The recipes are different, but the results are very similar. I did a random search for pizza dough recipes years ago and came across this one that has been a no-fail, very few ingredients, and really delicious!

This recipe card, made out of an index card, has been well-used. When my mother-n-law gifted me a Cuisinart Food Processor, I discovered a recipe for Pizza Dough in the manual. Read till the end to find the link to that blog post.

What You Need

Standing Mixer
Wet/Dry Measuring Cups
Measuring Spoons
Oil
Yeast
Flour
Sugar
Salt
Non-Stick Spray
Large Bowl
Plastic Wrap
Baking Stone/Pan 
Cheese Shredder

Recipe for Pizza Dough

Pizza Dough Ingredients

2 Cups Warm Water
1 Tbsp Yeast
Pinch of Sugar
1 Tbsp Salt
2 Tbsp Oil
5 Cups Flour

Directions for Pizza Dough

1. Pour warm water into the KitchenAid mixing bowl, then sprinkle in a pinch of sugar and 1 Tablespoon Yeast. Then, whisk together well.

2. Wait 5 minutes for the yeast to be bubbly, this will help the dough rise. 

3. Pour 3 Cups Flour into the mixing bowl, on top of the water and yeast mixture.
*The recipe says to add the Flour in two 2 1/2 Cups increments, but I altered it to 3 and 2.

4. Add 1 Tablespoon Salt and then 2-4 Tablespoons Oil to the Flour.

5. Insert the dough hook, lock mixer, and then turn on low until blended smooth.

6. When the flour is mixed into the wet ingredients, add 2 more Cups of Flour.

7. When the mess gets to be TOO much, remember to add your cover, and hope it helps keep your sanity.

 8. Mix the dough on low until a smooth dough ball forms, then place dough ball into a Non-Stick Sprayed medium bowl. Cover the bowl with Plastic Wrap and then set aside to rise 20 minutes.

While the doughs rest, on a cutting board, cut all of my veggies, shred cheeses, cook the sausage, make alfredo, and then clean up the flour mess. I typically do 2 separate pizza doughs, as I make 3 or 4 crusts out of each dough recipe. Feeding our family of 6 requires a lot of food. Also, we love eating leftover pizza for days!

9. When dough has doubled in size, use a knife or a pizza cutter to divide while resting on a baking sheet or baking stone that has been sprayed with non-stick spray.

10. Gently press the dough down on a sprayed baking sheet, until it is spread out to cover the pan.
I have not yet mastered the flying-through-the-air technique. For example, I spray the baking pans and then place a pizza dough ball in the middle. Then, using my fingers, I gently press the dough out towards the edges moving in a circle, until the pizza is fully formed.

11. Repeat with all of the dough pieces, so all of your crusts are made, and on baking sheets.

12. Let them rest for a few minutes, this helps them rise a bit more and additionally to not be tough.

Alfredo Sauce Recipe

Ingredients for Alfredo Sauce

1 Tbsp unsalted Butter
1-2 Tbsp Flour
1 Cup Milk
1 Cup Shredded Cheese Blend
 ~Parmesan
 ~Asiago
~Mozzarella
1/8 tsp each Garlic Powder, Salt, Pepper, Oregano, and Onion Powder for flavor

Alfredo Sauce Directions

1. Melt Butter in a saucepan, then mix in Flour with a whisk until crumbly. Let the flour cook for a minute.

2. If desired, add Garlic Powder, Oregano, Pepper, Salt, and Onion Powder for flavor and then stir into the flour mixture to combine.

3. Slowly pour in Milk into the pan, then whisk until blended with all of the flour crumbles.

4. When the milk is smooth, add shredded cheese blend in small amounts, whisking until smooth. Typically, we make alfredo sauce with asiago, mozzarella and parmesan cheeses. However, you can choose to use whichever cheese blend you’d like.

  • Gently press the dough down on a sprayed baking sheet, until it is spread out to cover the pan.
  • Repeat with all of the dough pieces, so all of your crusts are made, and on baking sheets.
  • Let the Pizza doughs rest for a few minutes, doing so helps them rise a bit more and not be too tough.
  • Spread the Alfredo sauce on the pizza crusts and then place the toppings and sprinkle cheese on top.
  • Bake each pizza at 400 degrees for 15-18 minutes on the middle rack.

13. Typically, we use a 1-pound sausage from ALDI, it cooks really well into sausage crumbles, and is great for pizza!
To cook the sausage, pre-heat a pan on the stove, spray with a non-stick spray, and cook the sausage on Medium until all of the sausage is browned. Then, using a spatula, break apart the meat.
14. Clean and then cut any veggies you want to add to your pizzas.  Some of the vegetables included were sweet peppers and cherry tomatoes. Additionally, I also added a small amount of 4-Year Aged Cheddar cheese to some of the pizzas!  
15. In our fridge, we also had leftover Shredded Chicken, Pepperoni, and this awesome package of Sliced Ham that I cut up.
